Ingredients
1 tbsp olive oil
1 lb. chicken breasts
2 tbsp honey
½ cup balsamic vinegar good quality
2 cloves garlic crushed
¼ cup chicken broth regular sodium
1 tsp rosemary fresh, finely chopped
½ tsp salt to taste
¼ tsp black pepper
HOW TO MAKE HONEY BALSAMIC CHICKEN
Step 1: Pound each chicken breast into 1-inch thickness using a meat mallet and slice them into small chunks.
Step 2: Into a mixing bowl, combine the broth, vinegar, garlic, honey, rosemary, salt, and pepper until well mixed. Keep a half cup of the marinade aside, then add the rest in a resealable bag.
Step 3: Into the bag with the marinade, add the slices of chicken. Seal the bag and shake. Let the chicken marinate for at least 15 to 30 minutes.
Step 4: Heat the oil in a large cast-iron skillet over medium-high heat. Once the oil is hot, add the chicken to the skillet and sear for about 4 minutes per side until golden brown. Set the chicken aside when done and keep them warm.
Step 5: Add the reserved marinade in the same pan and heat over medium heat. Then, adjust the heat to low and simmer the sauce for approximately 10 minutes or until thickened. Return the chicken to the pan and toss to coat with the glaze.
Step 6: Serve immediately with your favourite side dish. Enjoy!
