Homemade Christmas Sugar Cookie Bars

I know these bars are known as Christmas Sugar Cookie Bars but you can easily whip this up all year round if you’d like to. The ingredients are simple, you might already have these sitting in your cupboard. Decadent festive cookie bars, creamy with a fluffy frosting.

Ingredients

Sugar cookie bars:

1 stick (½ c.) salted butter softened to room temp.

1 c. sugar

1 Egg

1 teaspoon vanilla

2 c. all-purpose flour

1 teaspoon baking powder

¼ c. festive sprinkles

Frosting:

2 c. powdered sugar

1 stick (½ c.) salted butter softened to room temp.

3 tablespoons cream cheese softened

1 teaspoon vanilla

2 tablespoons milk

additional sprinkles

How to make Homemade Christmas Sugar Cookie Bars

Step 1: Prepare the oven. Preheat it to 350 degrees F. And using parchment paper, line a 9 x 9-inch baking pan.

Step 2: In a mixing bowl, place the butter and sugar. Beat until fluffy before mixing in the egg and vanilla. Gradually beat in the flour and baking powder until you have a thick batter. Add in the sprinkle and stir gently.

Step 3: Into the prepared pan, transfer the batter and spread. Place in the preheated oven and bake for about 20 minutes until golden brown. Remove from the oven when done and let the cookie bar cool completely. Then, lift the sides of the parchment paper once the cookie bar has fully cooled to pull the entire bar out.

Step 4: Using an electric mixer, blend the powdered sugar, butter, cream cheese, vanilla, and milk to make the frosting. Then, on the cookie bar, generously spread the frosting and sprinkle over some extra sprinkles. Into squares, slice the bar, and serve straight away. You have an option to let it sit for a little to set the frosting and become firmer.
