1 tablespoon olive oil
3 pounds chicken thighs bone-in, skin-on
Salt and pepper
Italian seasoning (divided)
2 tablespoons butter
1 medium onion diced
3 garlic cloves chopped
3-4 thyme sprigs (leaves only)
1 tablespoon flour for thickening the sauce
½ c. white wine
1 c. chicken stock
½ c. heavy cream

How to make Herb Roasted Chicken Thighs in Creamy White Wine Sauce
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a large skillet, heat a tbsp olive oil over medium-high heat.
Step 3: In the meantime, season the chicken thighs with salt, pepper, and Italian seasoning.
Step 4: Once the oil is hot, add the chicken thighs to the skillet skin side down, and cook over medium-high heat for about 4 to 5 minutes. Turn on the other side and continue to cook for another 4 minutes. Set the cooked chicken thighs aside.
Step 5: In the same skillet, add 2 tbsp butter. Once melted, saute the onion for about 3 to 4 minutes until brown. Add in the chopped garlic, thyme, and a tsp Italian seasoning. Cook for a minute more.
Step 6: Add in a tbsp flour and cook for a minute until no longer white. Then, gradually pour in the white. Adjust the heat to medium-high and continue to cook for a couple of minutes.
Step 7: To the skillet, pour in the chicken stock followed with the heavy cream. Mix well and cook further until the mixture has slightly reduced. This takes another 5 minutes.
Step 8: Adjust the seasoning (salt and pepper) according to taste.
Step 9: Place the chicken thighs back to the skillet.
Step 10: Transfer the skillet to the preheated oven and bake for about 35 minutes, uncovered.
Step 11: Remove from the oven and garnish with fresh thyme. Serve with roasted vegetables, mashed potatoes, or rice. Enjoy!
