4 – 6 large tomatoes1 pound ground beef
2 tablespoons taco seasoning
4 cups spinach, chopped
1/2 cup corn *fresh or frozen
1/4 cup sharp cheddar cheese *optional
1 tablespoon cilantro, chopped
HOW TO MAKE HEALTHY TACO STUFFED TOMATOES
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: First, slice the top of the tomatoes, then, scoop all the pulp out. Transfer the tomatoes in a baking dish.
Step 3: In a large saute pan, add the ground beef and cook until brown. Then, add in the taco seasoning.
Step 4: Stir in the spinach and corn. Continue to cook until the spinach is wilted and all the ingredients are completely mixed.
Step 5: Stuff with the beef mixture of the tomatoes.
Step 6: Then, sprinkle over the cheese.
Step 7: Place inside the preheated oven and bake for about 15 minutes or until the cheese has melted.
Step 8: Remove from the oven and top with cilantro before serving. Enjoy!
