Marinated in a delicious cilantro and lime marinade, these super juicy and tender chicken breasts are the perfect summer recipe. Grilled to perfection, fresh, simple, with a zesty punch, this easy chicken dish is undeniably one of the best!
Ingredients
8 Boneless skinless chicken breasts about 2 pounds
Marinade:
2/3 bunch fresh cilantro
zest of 1 lime
3 tablespoons lime juice about 2 limes
3 cloves garlic chopped
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
Optional Garnishes:
Cilantro leaves
Lime wedges
How to make Grilled Cilantro Lime Chicken
Step 1: To a blender or food processor, place the marinade ingredients. Process until you have a smooth mixture.
Step 2: To a large freezer-safe sealable bag, add the chicken breast and the marinade. Before tightly sealing the bag, make sure to press the air out. Coat the chicken well by gently pressing the marinade around the cutlets.
Step 3: Place the bag in the fridge and marinate the chicken for at least an hour or overnight.
Step 4: With some oil, grease the grill or a heavy-bottomed pan. Heat the pan over medium-high heat. Onto the hot grill, place the marinated chicken, and grill for about 5 minutes per side without moving the chicken around until charred and cooked through.
Step 5: If desired, garnish with some fresh cilantro and serve with lime wedges. Enjoy!
Notes:
For this recipe, you can use thinly sliced skinless chicken breasts as they will grill faster.
To help the meat cook evenly, pound the boneless, skinless chicken breasts to an even thickness.
To allow the flavour to seep into the chicken, marinate for at least an hour. This too will tenderize the meat.
To keep the chicken at a safe temperature while marinating, place the marinating meat in the fridge.
Make this either on the grill or heavy-bottomed pan.
To ensure the chicken will not be overcooked, cook the chicken straight from the refrigerator.
To prevent the chicken from tearing when you flip it, ensure to lightly grease the grill with oil before grilling.
If desired, reserve some of the marinades to drizzle over the cooked chicken.
You can use a shallow container made of non-reactive materials to marinate the chicken such as stainless steel, glass, or ceramic to make sure that the flavor won’t be affected.
