A feel-good recipe that you can easily and quickly make with a few simple, mostly pantry quintessential. This healthy meal with garlic chicken and zucchini noodles in a savoury sauce is the queen of all zucchini courses! Light but very satisfying and easily modifiable. Although this recipe calls for chicken, you can swap it with either shrimp, beef, fish, tofu, mushrooms, or whatever protein you preferred.

Zoodles:
3 large zucchini
Pinch of salt
Chicken:
2 boneless skinless chicken breast, sliced into 1/2-inch thin
1 tablespoon oyster sauce
1 tablespoon rice wine
pinch of black pepper
Sauce:
2 tablespoons oyster sauce
1 tablespoon soy sauce
1/4 c. chicken stock
1 teaspoon cornstarch
Stir Fry:
3 tablespoons cooking oil
3 cloves garlic, chopped
1-ounce ginger, chopped
1 red chilli, sliced
3 green onions, chopped
white & black sesame seeds
HOW TO MAKE GARLIC CHICKEN ZUCCHINI NOODLES STIR FRY
Step 1: Place the zucchini on a spiralizer after cutting the ends. To make the zoodles, rotate the spiralizer, then on a strainer lined with a small baking pan or bowl, transfer the zoodles. Sprinkle with salt, toss, and allow the zoodles to sweat for about 5 minutes.
Step 2: In a mixing bowl, place the chicken, oyster sauce, rice wine, and black pepper. Combine and marinate the chicken for at least 10 minutes.
Step 3: In a small mixing bowl, combine the sauce ingredients and set them aside.
Step 4: On a paper towel, place the zoodles. To remove the excess moisture, tap the zoodles with an extra paper towel. Note to not rinse the zoodles. Set aside.
Step 5: On medium-high, heat a large skillet. Add a tbsp cooking oil, then the marinated chicken. Cook for approximately 6 minutes until the chicken is completely cooked. Turn the heat off and set the chicken aside.
Step 6: In the same skillet, heat the rest of the 2 tbsp cooking oil. Add in the garlic, ginger, chilli, and green onions, then saute for about a minute until aromatic. Give the sauce a quick stir, then pour into the skillet. Bring the mixture to a simmer. Toss in the zoodles until evenly coated with the sauce. Return the chicken to the skillet and toss to mix. Before serving, garnish with some sesame seeds. Enjoy!
