This Tuscan Roast Chicken is incredibly easy to throw together and perfectly delicious! Juicy roasted chicken cooked in white wine flavoured with rosemary, garlic, and onions. An excellent dish, super comforting, and perfect for the whole family or entertaining guests.
I was quickly hooked with this recipe even before trying it. Just looking at the simple ingredients, I knew that this is gonna be a big hit! Unlike other roasted chicken recipes I’ve tried, this is the simplest but the most flavorful.
Gorgeously golden chicken with a rich and delicious sauce. Flavoured with simple spices and herbs and cooked in wine. From the skin to the flesh, you can taste the exciting flavours of herb and garlicky oil.
Ingredients
1 x 1.8-2kg free-range/organic chicken
2 onions quartered
8 garlic cloves
1 c. white wine
1 c. chicken stock
fresh rosemary
Rub:
2 sprigs of fresh rosemary
2 garlic cloves
zest and juice of 1 lemon reserve lemon
salt & pepper to taste
4-5 tbsp olive oil
How to make Easy Tuscan roast chicken
Step 1: Prepare the oven. Preheat it to 200 degrees C.
Step 2: Mix the finely chopped rosemary and garlic with lemon zest and juice, salt, pepper, and olive oil to make the rub.
Step 3: On the entire chicken, rub the mixture, pushing some of the rubs under the skin.
Step 4: In the cavity of the chicken, place the reserved lemon.
Step 5: In an oven-proof dish, place the chicken. Add the onions, garlic cloves, and more rosemary. Pour in the wine and chicken stock.
Step 6: In the preheated oven, place the chicken, then quickly adjust the temperature to 160 degrees C.
Step 7: Roast the chicken for about 45 minutes or until golden brown and completely cooked.
Step 8: Take the roasted chicken out of the oven and let it rest for at least 10 to 15 minutes.
Step 9: Slice the chicken and serve. Enjoy!
