Easy Peanut Butter Cookies

PREP TIME: 15 MINS | COOK TIME: 15 MINS | TOTAL TIME: 30 MINS | SERVINGS: 18 cookies

These easy peanut butter cookies are super good! They are chewy and soft with the perfect balance of flavours.

Ingredients

1 Egg

¼ c. creamy peanut butter (feel free to use natural peanut butter if desired)

½ c. brown sugar

2 tbsp unsalted butter room temperature (not melted – just let the butter from the refrigerator sit on the counter for about an hour or so)

½ tsp pure vanilla extract

½ tsp baking powder

2 tbsp granulated sugar for coating

¾ c. all-purpose flour sifted or aerated

How to make Easy Peanut Butter Cookies

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In a mixing bowl, cream the peanut butter and butter using an electric mixer until smooth. Then, add the brown sugar and continue to beat until blended. Now, add the egg and vanilla. Beat again until creamy.

Step 3: Place the flour and baking powder in a separate bowl. Mix well.

Step 4: Slowly add the dry ingredients to the wet, beating on low speed until mixed.

Step 5: Using parchment paper, line a baking sheet and lightly grease. On a plate, place the granulated sugar. Into balls, roll the spoonfuls of cookie dough. Roll it between your hands to form it into a ball, then completely coat each ball with sugar.

Step 6: On the prepared baking sheet, put the cookie balls about 2 inches away from each other. Place in the preheated oven and bake for about 12 minutes or until the cookies start to puff up a little, just brown on the edges, and have crackles on top. When done, remove from the oven and allow the cookies to cool for at least 10 minutes on the baking sheet. Then, transfer the cookies to a wire rack to cool fully.
