Easy Orzo with Shrimp and Feta

This is one of my favourite one-pot meals that are undeniably easy and quick to whip up! A super flavorful and impressive dish that is worthy of any special occasion.

If you are a mom like me, you’ll also feel my sentiment about running the house by yourself. I am currently working from home and enjoying it! I get to throw together decent meals for my family every day. One-pot meals have been my go-to because they are not only super easy to make and hassle-free, but they also guarantee the best meals for my family. I highly recommend you give this easy orzo with shrimp and feta a try. The combination of the ingredients is a sure winner! This recipe is a must and a keeper!

INGREDIENTS

2 tablespoons butter

12 jumbo shrimps, peeled and deveined

1 c. uncooked orzo pasta

1 teaspoon Old Bay Seasoning

½ c. good quality feta cheese crumbles

chopped parsley and lemon wedges to garnish

lemon juice to taste

How to make Easy Orzo with Shrimp and Feta

Step 1: Following the package directions, cook the pasta in a large pot of boiling water. Drain when done and rinse with cold water. Set aside.

Step 2: Using paper towels, pat the shrimp dry and toss them in Old Bay Seasoning.

Step 3: In a large, non-stick skillet, melt 1 tablespoon butter over medium heat. Once the butter has melted, add the shrimp to the skillet and fry for about 1 to 2 minutes per side, or until just cooked. Set the shrimps aside when done.

Step 4: Add the rest of the butter to the same skillet. Let the butter melt, then add the orzo and feta cheese. Stir until mixed, then turn the heat off.

Step 5: On top of arranging the shrimp and drizzle with lemon juice. Serve garnished with some chopped parsley, lemon wedges, and more feta cheese. Enjoy!
