Easy Meatloaf and Potatoes Dinner

Prep Time: 10 mins | Cook Time: 30 mins | Total Time: 40 mins | Servings: 12 meatloaf muffins

My kids are obsessed with these cute meatloaves with potatoes. Their most awaited dinner of the week and the best part is, these are incredibly easy to make and ready in less than an hour!

Ingredients

Meatloaf:

Cooking spray

1 lb ground beef, 90/10

1/2 tsp garlic powder

1/2 tsp kosher salt

1/4 tsp ground black pepper

3/4 tsp Worcestershire sauce

2-4 tbsp ketchup

1/3 c. Romano or Parmesan cheese

1/3 c. seasoned breadcrumbs

1 large Egg

Warm water (optional- this is only needed if the mixture feels too dry. Begin with a little amount)

Potatoes:

3-5 medium potatoes, peeled and sliced thin

2 tsp olive oil

1/2 tsp kosher salt

1/4 tsp ground black pepper

1/4 tsp garlic powder

1 c. cheddar cheese, shredded

How to make Easy Meatloaf and Potatoes Dinner

Step 1: Prepare the oven. Preheat it to 400 degrees. Using a cooking spray, grease a 12-cup non-stick muffin tin and set it aside.

Step 2: Place the meatloaf ingredients in a large bowl. Mix without overworking the meat.

Step 3: Between the muffin cups, divide the meat mixture and evenly press into the tin to cover it. The cups should be filled around halfway.

Step 4: In a large bowl, place the slices of potato. Drizzle the potato slices with oil and season with salt, pepper, and garlic powder. Toss until the slices are coated.

Step 5: Onto the tops of the meatloaf in the muffin pan, place around 4 to 5 slices of potato. Place in the preheated oven and bake for about 20 minutes.

Step 6: When done, take the pan out of the oven and sprinkle the meatloaf and potato muffins with cheese. Resume baking for another 10 minutes until the cheese has melted.

Step 7: Remove from the oven and allow the meatloaf for at least 5 minutes before cutting around the sides of the muffin tin using a butter knife. Then, carefully remove the meatloaf from the tin and serve immediately. Enjoy!
