Easy Low Carb Cheeseburger Soup

Revive your soul with this easy one-pot Low Carb and keto-friendly Cheeseburger Soup. It’s the perfect bowl of comfort after a busy day or week. Throw this soup together in less than thirty minutes, and make sure not to skip the bacon as it adds extra goodness to this already amazing cheeseburger soup!

Ingredients

2 tablespoons butter unsalted

1 pound ground beef

4 slices bacon thick cut

4 ounces cream cheese softened to room temperature

1/2 teaspoon garlic powder

2 tablespoons tomato paste

1 tablespoon mustard (yellow)

1/4 teaspoon smoked paprika

2 c. beef broth or beef stock

1/4 c. heavy whipping cream

6 ounces cheddar cheese shredded

0-1/4 teaspoon salt

1/4 teaspoon pepper

How to make Easy Low Carb Cheeseburger Soup

Step 1: Into small pieces, chop the bacon.

Step 2: On medium-high, heat a dutch oven or another heavy-bottomed pan. Add the bacon and cook for about 5 to 8 minutes, stirring often until browned and crispy.

Step 3: To a paper towel-lined plate, transfer the bacon. Save the grease from the pan for later use.

Step 4: In a pan, melt the butter. Once the butter has melted, add the ground beef to the pan. Cook while breaking the meat up until completely cooked and no longer pink.

Step 5: To the cooked beef in the pan, add the cream cheese, tomato paste, mustard, garlic powder, smoked paprika, salt, and pepper. Stir well until smooth. Then, add the beef broth to the pan along with the cream. Bring the mixture to a low simmer.

Step 6: Add the cheese and stir until blended. Allow everything to simmer for about 5 to 7 minutes or until completely heated and melted smooth.

Step 7: Return the bacon to the pan. Before serving, allow the soup to cool for about 5 to 10 minutes to thicken the soup. Enjoy!
