This version of our favourite Beef Wellington is budget-friendly and easy to make. It’s a very amazing dish perfect for special occasions!

3 tbsp butter
2 Eggs beaten
4 tbsp saltine crackers or bread crumbs, crushed
1 ½ lb. ground beef
2 tbsp dried parsley fresh works best
1 tbsp cream milk works fine, as well
1 small onion chopped fine
4 cloves garlic minced
1 tsp salt
8 oz. baby Bella mushrooms
½ c. red wine or grape juice
mozzarella cheese optional
1 tsp basil (fresh works best)
salt and pepper, to taste
2 sheets puff pastry thaw out according to the pkg
How to make easy Ground Beef Wellington
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Combine the eggs, ground beef, saltine crackers, dried parsley, salt, and cream until well blended. Set aside.
Step 3: Melt the butter in a large saucepan. Then, add the minced onion and mushrooms. Cook over medium-high heat until the onions are clear and the mushrooms sweat.
Step 4: Adjust the heat to medium. Add the garlic along with the red wine and basil. Then, adjust the heat to high and continue to cook until the liquid has reduced. Take the pan off the heat and let the mixture cool.
Step 5: Lay the pastry sheets on a lightly floured surface. Cut the sheets into 4 squares. Across each square, spread the mushroom mixture and top with a thin layer of mozzarella cheese. On top, add half a cup of the meat mixture.
Step 6: Over the meat, pull the corners of the sheet (forming a ball), then pinch the edges together.
Step 7: On a lightly greased cookie sheet or baking pan, place the bundles, seam-side down. On top, cut a tiny slit and brush each top with cream or beaten egg.
Step 8: Place in the preheated oven and bake for about 30 to 40 minutes or until golden brown and the meat is completely cooked
Step 9: Remove from the oven when done and serve with brown gravy. Enjoy!
