CROCKPOT TACO SOUP RECIPE

If you love tacos, I am pretty sure that you’ll dig this crockpot taco soup. It has the same flavours you love from your traditional tacos and you can serve this as well with your favourite toppings such as tortilla chips, cheese, sour cream, and more.

To make this taco soup, you can use any type of black beans or kidney beans. Then, simply throw everything in your crockpot and leave to cook. When you come back, serve this very comforting dish in bowls with any of your preferred fun toppings. Enjoy a bowl of this flavour-packed taco pot with ground beef, ranch seasoning, taco seasoning, Rotel, corn, diced tomatoes any time with this easy crockpot recipe. Ingredients

1 lb. lean ground beef

19 oz. can of diced tomatoes (540 ml – juices include)

19 oz. can of black beans (540 ml – drained & rinsed)

11.5 oz. can of corn kernels (340ml – drained)

1 bell pepper (diced)

1 red onion (diced)

¼ cup taco seasoning

4.3 oz. can of green chiles (127 ml)

3 cups chicken stock (or homemade bone broth)

Toppings:

cilantro

sour cream

avocado

Cheese

tortilla strips

TO MAKE CROCKPOT TACO SOUP

Step 1: Into a 6-quart slow cooker, add the ground beef. Using a spatula, break the meat into small pieces.

Step 2: Now, add the remaining ingredients (tomatoes, black beans, corn kernels, bell pepper, onion, taco seasoning, green chiles, and chicken stock). Stir until everything is incorporated.

Step 3: Put the lid on and set to cook on a low setting for about 6 to 8 hours.

Step 4: Serve immediately with your favourite toppings. Enjoy!

Note:

If there are any leftovers, keep them in an airtight container and store them in the fridge for up to 4 days. Or in the freezer for up to 3 months.
