Creme Brûlée Sugar Cookies

PREP TIME: 10 MINS | TOTAL TIME: 50 MINS | YIELDS: 40

These cookies are my new obsession! These Creme Brûlée Sugar Cookies are super amazing, and the caramelized sugar is a great sub for frosting.

INGREDIENTS

COOKIES:

1 large egg

3/4 cup (1 1/2 sticks) butter, softened

2 teaspoons cornstarch

1/2 cup granulated sugar

1/2 cup packed brown sugar

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon kosher salt

1 tablespoon pure vanilla extract

FROSTING:

1 1/4 cups powdered sugar

1 (8 ounces) block cream cheese, softened

1/4 cup granulated sugar

1 teaspoon pure vanilla extract

How to make Creme Brûlée Sugar Cookies

Step 1: Prepare the oven. Preheat it to 350 degrees. Using parchment paper, line two cookie sheets.

Step 2: In a mixing bowl, place the butter and sugar. Cream for about 3 to 4 minutes or until light and fluffy. Then, stir in the egg and vanilla.

Step 3: Add the flour, cornstarch, baking soda, and salt to a different bowl and mix well. Add this to the wet ingredients and whisk until smooth and you have a thick dough.

Step 4: Scoop the dough using a small cookie scoop and place it onto the prepared cookies sheets. Slightly flatten each cookie by lightly pressing them down. Then, place in the preheated oven and bake for about 9 to 10 minutes or until the edges of the cookies are just beginning to brown.

Step 5: When done, take the cookies out of the oven and allow them to cool in the cookie sheets for about 2 to 3 minutes. Then, transfer them to the cooling rack to cool fully.

Step 6: For the frosting, beat the cream cheese until smooth. Then, add the powdered sugar and vanilla. Mix again until smooth.

Step 7: Into a small bowl, place the sugar. Onto the tops of each cookie, spread about a tbsp of frosting. Next, press each cookie into the granulated sugar to coat the frosting with sugar.

Step 8: Using a kitchen torch, caramelize the sugar on top of the cookies. Set them aside to cool and serve. You can also keep the cookies in the fridge for up to 4 days. Enjoy!
