Corn Fritters

Enjoy these delicate, sweet, and filling Corn Fritters anytime with this easy recipe. Make these fritters either using fresh, frozen, or canned corn. These fritters are super good, you’ll forget your name! Try this easy and quick recipe very soon, and I’m sure even your pickiest eaters will love these!

INGREDIENTS

olive oil for frying about 3-4 tbsp

1 Egg

½ c. all-purpose flour

¼ c. water

1 teaspoon baking powder

1 medium bell pepper seeded and diced

1 c. corn kernels fresh or canned

¼ c. chopped parsley

¼ c. chopped chives

1 tablespoon olive oil

½ teaspoon salt or to taste

½ teaspoon pepper or to taste

How to make Corn Fritters

Step 1: To make the batter, place the flour, baking powder, egg, and water in a medium bowl. Mix well until the batter is smooth. Stir in olive oil, salt, and pepper.

Step 2: Add the corn to the batter along with the bell pepper, parsley, and chives. Stir well until combined. Set aside.

Step 3: Drizzle about 3 to 4 tbsp olive oil into the hot large, non-stick skillet over medium heat. Add the corn mixture to the hot oil a heaping tbsp at a time. Slightly flatten the tops to create even fritters and cook the fritters for about 3 to 4 minutes on each side or until golden brown. Decrease the heat if the fritters brown too quickly.

NOTES:

You can bake the fritters instead of frying them to save some calories. First, lightly grease with oil a non-stick muffin tin.

Between 12 muffin cups, divide the corn mixture. Place in 350 degrees F and bake the fritters for about 15 minutes.

Alternately, you can also add a heaping tbsp of each of the corn mixture on a cookie sheet lined with parchment paper. Bake at 350 degrees F for about 15 minutes.
