CHOCOLATE CHIP PUMPKIN BREAD

This Chocolate Chip Pumpkin Bread is one of my top favourites. It’s super moist, packed with pumpkin flavour and chocolate chips. For extra goodness, serve this bread a little warm with a smear of butter.

I don’t wait for pumpkin season anymore. I always find an excuse to whip this bread up. It’s so great to miss for weeks!

INGREDIENTS

2 large eggs

1 c. chocolate chips

1 c. brown sugar

2 tsp pumpkin pie spice

1 tsp baking soda

1-2/3 c. all-purpose flour

1/2 tsp baking powder

15 oz. canned pumpkin

1/2 c. canola oil

½ c. granulated sugar

3/4 tsp salt

HOW TO MAKE CHOCOLATE CHIP PUMPKIN BREAD

Step 1: Prepare the oven. Preheat it to 350 degrees. Using a non-stick spray, grease a loaf pan.

Step 2: Into a large mixing bowl, combine the flour, brown sugar, sugar, pumpkin pie spice, baking soda, salt, and baking powder until well blended.

Step 3: Mix well the pumpkin, oil, and eggs into a smaller bowl until combined.

Step 4: Into the dry ingredients, pour the pumpkin mixture and mix well until combined. Fold in the chocolate chips.

Step 5: Into the prepared loaf pan, spread the batter. Place in the preheated oven and bake the loaf for about 60 to 70 minutes or until a toothpick inserted in the centre of the loaf comes out clean.

Step 6: Remove from the oven when done and transfer the pan to a wire rack for at least 10 minutes to cool.

TIPS:

Tightly wrap the bread and keep it on the counter for up to 2 days or in the fridge for up to 7 days.

Slice the bread, wrap each piece, and store in a freezer bag for up to 3 months. Before serving, thaw on the counter overnight.

Heat the bread in the microwave for 10 seconds to rewarm each slice.
