PREP TIME: 15 MINS | COOK TIME: 20 MINS | TOTAL TIME: 35 MINS | SERVINGS: 8

This easy chilli recipe is one of my grandma’s top picks! It’s so simple to whip up and ready in no time. I am pretty sure you’ll love every bit of this super comforting, hearty, and filling chilli.

Ingredients

2 cans kidney beans drained and rinsed (15-oz. cans)

1 small yellow onion about 1 ½ cups diced

2 lbs ground beef or turkey

2 small green peppers about 2 cups diced

6 oz. can tomato paste

2 cans tomatoes diced (15-ounce cans)

15 oz. can tomato sauce

15 oz. water

3 tbsp chilli powder

2 tbsp onion powder

2 tbsp garlic powder

3 tbsp cumin

½ tsp cayenne pepper

1 tsp chipotle powder

1 tbsp paprika

½ tsp baking soda optional

½ tbsp salt

1 tsp white pepper

How to make Chili

Step 1: Saute the diced peppers and onions in a large Dutch oven until clear and beginning to caramelize.

Step 2: To the Dutch oven, add the seasonings except for the baking soda and continue to cook, stirring to make sure it doesn’t burn. This takes a minute or two.

Step 3: Add the ground meat to the pan and cook until just done. Add the tomato sauce followed by the diced tomatoes, water, and tomato paste.

Step 4: Bring the mixture to a simmer. Cook over medium-low heat for approximately 5 minutes, then add the drained beans. Next, add the baking soda and stir constantly over medium heat until the bubbles are gone. Remove from the heat when done and serve right away. Enjoy!

Notes:

To prevent the chilli from burning, make sure to stir the chilli constantly.

To save time, prep the ground beef ahead in large batches, then freeze. You can also use pre-cooked ground beef if desired.

The baking soda assists to cut the tomatoes’ acidity.
