Chicken Souvlaki

Prep time: 25 mins | Cook time: 15 mins | Total time: 25 mins | Yields: 1.5 pounds skewers | Serves: 3

I love this chicken souvlaki. It’s so simple to make and fast! The pieces of chicken are marinated in oregano and garlic marinade. Serve this alongside grilled pita for an easy and quick meal any time!

Ingredients

Chicken Souvlaki

3 tablespoons olive oil

1.5 pounds chicken (3-4 boneless breast or 12-14 chicken tenders)

1 tablespoon garlic (about 4-5 garlic cloves, fresh minced)

3 tablespoons oregano (fresh leaves or 1.5 tablespoons dried, or mix half-half)

1/4 c. lemon juice (juice, about 1 large lemon’s juice)

2 tablespoons parsley (fresh leaves, chopped)

1/2 teaspoon cumin powder

1/4 teaspoon black pepper (freshly cracked)

1/2 teaspoon chilli flakes

1/2 teaspoon salt

Grilled Pita (for serving, optional)

Pita bread

Oil spray

How to make Chicken Souvlaki

Step 1: In a wide bowl with a lid or sealable bag, add the Chicken Souvlaki ingredients except for the chicken. Mix well to make the souvlaki marinade and set it aside.

Step 2: Into small 1-2 inches pieces, slice the chicken breast and add to the marinade. Toss to coat. Put the lid on or seal the bag and keep it in the fridge until ready to use. Make sure to marinate the chicken for at least 20 to 30 minutes preferably overnight. For this recipe, you can also use chicken tenders. You can even cut into about 2 inches long and 1-2 inches wide pieces a chicken breast, then pound a little for even sizes.

Step 3: Prepare the grill and preheat it. Into the skewers, skew the chicken pieces (you can skew about 4 to 5 long tenders into each skewer). Lay on the grill and cook until the chicken is completely cooked on every side.

Step 4: Spray oil on the grill. Grill the pita for about 30 seconds to 1 minute per side until nice grill marks appear on both sides. Serve this with the Chicken Souvlaki. Enjoy!
