Chicken Alfredo Bake

If you want another easy weeknight meal, you have to give this Chicken Alfredo Bake a try! Enjoy this delicious, very warming, and comforting dish for a simple yet crazy delicious and quick meal perfect for the entire family.

Ingredients

1 pound thawed chicken breasts cut in bite-size

10 ounces uncooked penne ziti

olive oil to grease the pan

1/3 c. grated Parmesan cheese

1 ¼ c. shredded Mozzarella cheese

fresh parsley for garnish

Salt and pepper to taste

Alfredo Sauce:

2 garlic cloves-minced

1/3 c. unsalted butter

1 tablespoon flour

1 ¼ c. milk

6 ounces cream cheese

1 c. heavy cream

1 teaspoon Italian seasoning (or more to taste)

½ c. grated Parmesan cheese

pasta water to thin the sauce if needed

½ teaspoon salt

¼ teaspoon pepper

How to make Chicken Alfredo Bake

Step 1: Prepare the oven. Preheat it to 400 degrees F. Using non-stick cooking spray, grease a baking dish.

Step 2: Following the package directions, cook the pasta until al dente. Drain when done, reserving some pasta water.

Step 3: In bite-sized pieces, chop the chicken and sprinkle with salt and pepper.

Step 4: Heat about 1 tbsp olive oil in a pan over medium heat. Once the oil is hot, add the chopped chicken to the pan and sear for approximately 10 to 15 minutes until completely cooked. Place the chicken once cooked onto the pasta.

Step 5: Melt the butter in a pan over medium heat. Stir in the flour to the melted butter until dissolved. Then, add the minced garlic and continue to cook for another minute or two, stirring until golden.

Step 6: Slowly stir in the milk until the mixture is smooth and lumps free. Carefully whisk in the heavy cream, then add the cream cheese. Mix well until melted before adding in the Italian seasoning, salt, and pepper, then half cup of grated Parmesan. Bring everything to a simmer and cook for about 3 to 4 minutes until the sauce begins to thicken, stirring constantly. Stir in the reserved pasta water to thin out the sauce to your desired consistency.

Step 7: To the pasta and chicken, add the Alfredo sauce and toss to coat.

Step 8: In the prepared baking dish, spread about half of the mixture and sprinkle with 3/4 cup of shredded mozzarella cheese, then top with the rest of the pasta mixture. Over the pasta mixture, spread the rest of the Mozzarella and 1/3 cup of grated Parmesan.

Step 9: Place in the preheated oven and bake for about 15 to 20 minutes or until the chicken Alfredo bake has a nice golden-brown colour on top.

Step 10: Remove from the oven when done and garnish with some fresh parsley. Serve and enjoy!
