Cheesy Potato Breakfast Casserole

I make sure not to skip breakfast. I believe that it is the most important meal of the day. And nothing beats a filling breakfast like this delicious Cheesy Potato Breakfast Casserole. Super easy to prep with a few simple ingredients. You can even whip it up the night before, place it in the fridge, and just pop it in the oven the next day. This way, you’ll have no excuse to make it or even enjoy a satisfying breakfast.

This breakfast casserole is a huge hit and a crowd favourite. Incredible breakfast with loads of cheese, potatoes, and tasty sausage with sufficient egg, buttery, and peppery goodness. This is the reason why this has been our go-to holiday or any day breakfast recipe. Never worry about leftovers because this casserole reheats wonderfully!

Ingredients

1 lb Italian Sausage, cooked

1 yellow onion, chopped, sauteed in sausage grease

7 Eggs

1/2 c. milk

20 oz. bag frozen Diced Hash Browns

8 oz. brick of Mild Cheddar Cheese, grated

Salt & Pepper, to taste

How to make Cheesy Potato Breakfast Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Using a non-stick spray, grease a medium casserole dish and set it aside.

Step 3: Ready the sausage and onions.

Step 4: Combine all the ingredients (eggs, milk, diced hash browns, grated cheddar cheese, salt, and pepper) in a large mixing bowl including the sausage and onions. Into the prepared casserole dish, pour the mixture, reserving about a cup of cheese for later.

Step 5: Place in the preheated oven and bake the casserole for about 35 minutes. Remove from the oven when done, top with the reserved cheese, and bake for another 8 minutes.

Step 6: When done, take the casserole out of the oven and let it rest for at least 15 to 20 minutes before serving. Enjoy!
