CHEDDAR ZUCCHINI BREAD

I love this cheddar zucchini bread! It’s super soft, buttery, and incredibly packed with flavour! It is another easy zucchini recipe that is a must and for keeps. Enjoy this amazing bread by itself or serve this as a side dish.

Zucchini is a staple at home. I enjoy gardening, and I have my supply of veggies whenever I need them. I have plenty of zucchini supplies, and I give some away. Zucchini is a big part of our menu. I have tons of zucchini recipes, and I cannot cherry-pick. I love them all! Make sure to give this cheddar zucchini bread a try very soon, and watch out for my other zucchini recipes!

INGREDIENTS

1 stick (8 tbsp) butter, melted

¾ c. shredded zucchini (about one medium-large zucchini)

2 large eggs

4 tsp baking powder

3 c. all-purpose flour

1 c. milk

1 tsp baking soda

1 c. shredded cheddar cheese plus ¼ cup for sprinkling on top if desired

2 tsp minced garlic (about 4 cloves)

1 tsp salt

HOW TO MAKE CHEDDAR ZUCCHINI BREAD

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a nonstick spray, grease a 9 x 5-inch loaf pan.

Step 2: Place the flour, baking powder, salt, and baking soda in a large bowl. Mix well until combined.

Step 3: To the dry mixture, add the zucchini, garlic, 1 cup cheese, eggs, milk, and butter. Stir until the mixture is entirely moistened.

Step 4: Into the prepared pan, pour the dough. Using a spatula or the back of a spoon, smooth it out and top with extra cheese if desired.

Step 5: Place in the preheated oven and bake for about 50 minutes. The bread is done when a toothpick inserted in the centre comes out clean.

NOTES:

In this recipe, blotting or removing the moisture from the zucchini is not needed.

For more flavour, you can brush the top with garlic butter.
