Creamy_Spaghetti_Carbonara

To make this Creamy Spaghetti Carbonara, You’ll need the following Ingredients:

Ingredients:

1 pound spaghetti

1 tablespoon olive oil

8 slices bacon, diced

1 tablespoon olive oil

1 onion, chopped

4 eggs

1 clove garlic, minced

1/4 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

1 pinch salt and black pepper to taste

2 tablespoons chopped fresh parsley

2 tablespoons grated Parmesan cheese

Directions:

1. In a large pot of boiling salted water, cook spaghetti pasta until al dente. Drain well. Toss with 1 tablespoon of olive oil, and set aside.

2. Meanwhile, in a large skillet, cook chopped bacon until slightly crisp; remove and drain onto paper towels. Reserve 2 tablespoons of bacon fat; add remaining 1 tablespoon olive oil, and heat in a reused large skillet. Add chopped onion, and cook over medium heat until onion is translucent. Next, add minced garlic, and cook 1 minute more. Then add wine if desired; cook one more minute.

3. Return cooked bacon to pan; add cooked and drained spaghetti. Toss to coat and heat through, adding more olive oil if it seems dry or is sticking together. Add beaten eggs and cook, tossing constantly with tongs or large fork until eggs are barely set. Quickly add 1/2 cup Parmesan cheese, and toss again. Add salt and pepper to taste (remember that bacon and Parmesan are very salty).

4. Serve immediately with chopped parsley sprinkled on top, and extra Parmesan cheese at the table.

Chicken Parmesan

by Rebecca June 9, 2019
written by Rebecca

“My own version of Chicken Parmesan. I cook it (Chicken Parmesan) a little different than what they do in the restaurants, with less sauce and a crispier crust.”

Prep:25m Cook:20m Ready In:1h

Chicken Parmesan

To make this Chicken Parmesan, You’ll need the following Ingredients:

Ingredients:

4 skinless, boneless chicken breast halves salt and freshly ground black pepper to taste

2 eggs

1 cup panko bread crumbs, or more as needed

1/2 cup grated Parmesan cheese

2 tablespoons all-purpose flour, or more if needed

1 cup olive oil for frying

1/2 cup prepared tomato sauce

1/4 cup fresh mozzarella, cut into small cubes

1/4 cup chopped fresh basil

1/2 cup grated provolone cheese

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

Directions:

1. Preheat an oven to 450 degrees F (230 degrees C).

2. Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.

3. Beat eggs in a shallow bowl and set aside.

4. Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.

5. Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.

6. Dip flour-coated chicken breast in beaten eggs. Transfer breast with bread crumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.

7. Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.

8. Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.

9. Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
