LOUISIANA HOT CRAB DIP

by Rebecca June 15, 2020
written by Rebecca

I’m addicted to hot crab dip and this version of the Louisiana Hot Crab Dip is by far the best-modified version I’ve ever tasted! A knocked-up version of the old hot crab dip we keep seeing on the internet. Crab dip is great with your favorite cracker or chips. It’s one of the best appetizers, and the most loved. Kids and adults alike enjoyed this. Great for game nights or movie nights. You can even serve this at any party and this will not disappoint. I think of this dip as royalty, this is like one of those appetizers that are served in tea parties. And growing up, my grandma hosted a lot of tea parties so I know how grand tea parties can be.

This dip is simple to make, with easy to find ingredients, mixed thoroughly for the flavors to be perfectly incorporated. Cheesy, creamy, and hot with a little kick if you add hot sauce to it which I would highly recommend. So go on and chill with your friends in the patio with some ice-cold beer and a hot crab dip platter of your choice.

INGREDIENTS

1/2 pound jumbo lump crabmeat, free of shells

1 (8 ounce) package cream cheese

1/2 cup mayonnaise

1/4 cup grated Parmesan

3 tablespoons minced green onions (white and green parts)

2 large garlic cloves, minced

2 teaspoons Worcestershire sauce

2 tablespoons fresh lemon juice

1 teaspoon hot sauce

1/2 teaspoon Old Bay seasoning

Salt and pepper to taste

HOW TO MAKE LOUISIANA HOT CRAB DIP

Step 1: Prepare the oven. Preheat it to 325 degrees F.

Step 2: Combine the crabmeat, cream cheese, mayonnaise, parmesan, onions, garlic, Worcestershire sauce, lemon juice, seasoning, and salt & pepper in a casserole dish. Gently stir until incorporated.

Step 3: Adjust the seasoning accordingly.

Step 4: Place inside the preheated oven and bake for about 35 to 40 minutes or until the top is lightly golden.

Step 5: Once done, remove from the oven and serve immediately with some hot sauce on the side for some kick. Enjoy!

Southern Fried Salmon Patties

by Rebecca June 15, 2020
written by Rebecca

If you want something simple and homemade, I would highly recommend these Sothern Fried Salmon Patties. It’s very easy to make, you just have to mix all the ingredients, then, form the mixture into patties, and fry. Literally, the simplest to make and they taste good, too! I serve these patties normally with some macaroni and cheese or with any side dish that you can think of. It’s my personal favorite, my go-to.

These salmon patties or salmon cake as what others call it reminds me of my childhood. My mom was crazy about these patties, she made it more than any other recipe. She served it with whatever side dish she can think of and these without fail always put a smile on our faces. When I grew older I asked her to teach me how to make these patties and I’m glad she did because this recipe saves me through lazy and busy days.

INGREDIENTS

1 (14 3/4 ounce) canned salmon

1/4 cup onion, finely chopped

1/4 cup cornmeal

1/4 cup flour

1 egg

3 tablespoons mayonnaise

How to make Southern Fried Salmon Patties

Step 1: To prepare the salmon, cut it, and make sure to drain the salmon thoroughly.

Step 2: Transfer the drained salmon in a mixing bowl. Use a fork to flake it evenly.

Step 3: Once flaked, add in the onion, cornmeal, flour, mayonnaise, and egg. Stir until incorporated.

Step 4: Shape the mixture about the size of a normal burger patty or even less. Do this for the rest of the mixture.

Step 5: Place the patties in a skillet with hot oil and cook them over medium heat. Cook both sides until browned.

Step 6: Once cooked, transfer the patties into paper towels to drain.

NOTE: If you are wondering, we use the mayonnaise to help the patties hold their shape and it prevents the patties from drying.

IMPOSSIBLE PIE

by Rebecca June 15, 2020
written by Rebecca

Today I ran into an old friend. It’s great to see some old faces that we haven’t seen for a long time. She invited me to her house and we talked non-stop. And she made me a pie that I would never forget. She calls it the Impossible pie. It’s so good I don’t want to miss making it myself. So I asked her to share the recipe and here it is. When I went home I immediately make it and realized why she called it the Impossible pie because unlike other pies this forms its own crust. It blows my mind! And the filling texture of this pie is like that of a baked egg custard – smooth and creamy. Plus, it’s pretty easy to make, you just need to mix the ingredients and pour into the pie plate, bake, and voila! You’ve got yourself a simply delicious Impossible pie. The slightly rough textured top is from the coconut flakes that come to the surface when baking. Amazing, right? This pie has a soft bottom crust and a custard-like filling. I made it yesterday and I have some leftover sitting in the fridge. When I think about it this pie is best eaten when chilled with a scoop of whipped cream on top. Try it for yourself and let me know what you think.

INGREDIENTS

2 cups of milk

1 cup shredded coconut

4 eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

8 tablespoons butter

3/4 cup sugar

1/4 teaspoon ground nutmeg

HOW TO MAKE IMPOSSIBLE PIE

Step 1: Prepare the oven. Preheat it to 350 degrees. And grease and flour a pie plate.

Step 2: In a blender, mix the milk, coconut, eggs, vanilla, flour, butter, and sugar. Blend until incorporated.

Step 3: Pour everything in the greased and floured pie plate.

Step 4: Sprinkle evenly the nutmeg over the mixture.

Step 5: Place inside the preheated oven and bake for 45 minutes.

Step 1: In a very large pan, combine the sugar, buttermilk, corn syrup, and salt. Bring to a rolling boil.

Step 2: Pour in the soda and stir. It will foam considerably, it’s normal so don’t worry.

Step 3: Cook until a soft-ball is formed when dropped in cold water. You can use a candy thermometer, too. When it reads 235 degrees F the syrup is at a soft-ball stage.

Step 4: Remove the pan from the heat. Mix in the vanilla and beat until the color changes and the mixture thickened.

Step 5: Add in the pecans and stir.

Step 6: Spoon or scoop the mixture and drop on a well-greased non-stick cookie sheet with foil or wax paper. Make sure to this step fast before the candy hardened.
