Zucchini Cake

This is one of the many zucchini recipes that you will fall in love with. Who would have thought that zucchini works great too when added in cakes? A healthy sweet fix that will not leave you feeling guilty. A super moist Zucchini Cake with walnuts that are smothered with perfectly sweet sugar cream cheese frosting.

Ingredients

FOR THE ZUCCHINI CAKE:

3 cups flour

1 cup of sugar

1 cup brown sugar

1/2 teaspoon salt

1 1/2 teaspoons baking soda

1 teaspoon baking powder

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon allspice

3 cups grated zucchini

1 1/4 cups vegetable oil

4 eggs

1 teaspoon vanilla extract

3/4 cup chopped walnuts

FOR THE BROWN SUGAR CREAM CHEESE FROSTING:

12 oz cream cheese (1 1/2 boxes)

4 tablespoons unsalted butter softened

3 tablespoons light brown sugar

2 teaspoons vanilla extract

How to Make Zucchini Cake

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Then, grease and flour a 9 x 13-inch baking dish and set aside.

Step 3: Whisk the flour, sugar, brown sugar, salt, baking soda, baking powder, cinnamon, nutmeg, and allspice in a medium bowl.

Step 4: In another large bowl, combine the grated zucchini, vegetable oil, eggs, and vanilla extract.

Step 5: Now, stir the flour mixture into the zucchini mixture in various intervals. Making sure to mix just until combined.

Step 6: Then, fold in the chopped walnuts.

Step 7: Transfer the batter into the prepared baking dish and place inside the preheated oven to bake for approximately 40 to 45 minutes. To check the doneness, insert a toothpick in the middle. Once it comes out clean the or with moist crumbs the cake is done. Making sure to not overbake and check the cake after 40 minutes and every after 5 minutes thereafter.

Step 8: Remove the cake from the oven and allow it to cool completely.

Step 9: Meanwhile, to make the frosting, combine the cream cheese, butter, brown sugar, and vanilla in a mixing bowl. Use a mixer to beat until the mixture is light, fluffy, and smooth. Once the cake is fully cooled, spread the frosting onto the cake and chill to set. Enjoy!

What not to love about this casserole? It is everything we ever ask for! It is cheesy with a bit of spice and a breeze to make. I have never tasted anything like this before! It is extremely delicious and although it may seem that a lot is going on but this recipe is rather simple. This casserole is loaded with hotdogs, chili and beans, cheeses, and tater tots with a scrumptious homemade sauce topped with more extra cheese. All these amazing ingredients are combined in a casserole to be the ultimate comfort food we could ever ask for. So good and addicting no one can ever say no.

This Chili Cheese Dog Tater Tot Casserole will have everyone talking! Try bringing this to potlucks and this will ultimately be the star. This casserole is such a delicious, filling meal that everyone will love.

INGREDIENTS

8 hotdogs, cut into 1/2 inch slices

2 (15 oz) cans chili (with beans)

3/4 cup ketchup

1 teaspoon Worcestershire sauce

1/2 onion, finely chopped

1/4 teaspoon crushed red pepper flakes

1 1/2 cups shredded cheddar cheese, divided

1/2 cup mozzarella cheese, divided

1 (28 oz) bag frozen tater tots

Salt & pepper to taste

These chewies are perfect if you need a quick sweet fix. A real treat for the chocolate lovers that are too lazy to either go out to buy or make some. This will only take five minutes of your time and all you got to do is pop these in the oven. Wait for a bit and you’ll get yourself a fudgy, chewy, melty chocolate, and full of buttery flavor chewies! Super easy and a breeze to make. And freaking delicious you’ll find yourself craving for more!

My kids are legit chocoholics. So instead of chips during game nights, we all agreed to have sweets. Before these chewies, I normally spent eternity in the kitchen to make our movie snacks/sweets that is why I often fell asleep in the middle of the movie. Which likely upset my kids and my husband. When I found these amazing Chocolate Chip Pan Chewies, I am saved! I never spent forever in the kitchen since and they are perfectly amazing for a quick and easy sweet fix. I love this summer squash because it is so versatile. And there are a lot of recipes that use zucchini; from pasta to different savory dishes. Like this Roasted Parmesan Zucchini. A delicious roasted dish that takes only fifteen minutes to make!

This five-ingredient dish is a breeze to make and feeds a family of four. An awesome melts in your mouth roasted zucchini with parmesan that gives this lavish green squash a subtle little crunch. This salad is so enticing. A mix of refreshing and colorful veggies in a simple lemon and herb dressing is so satisfying and flavorful. Salads are great not only as a side dish but as a complete meal if we incorporate the correct ingredients. This Israeli Salad is light, bright, and pleasing that is good for the health.

I love salad. They are the most versatile. You can put just about anything and they are one of the easiest and quirkiest to prepare. And this Israeli salad is one of the best I’ve ever tasted! A simple yet sophisticated side that is great with anything. My kids love how this salad came together perfectly. The bright colors, the simple dressing that binds everything together, and it is so refreshing and light. Salads are a staple in my home and this is one of the most requested. If in case you are looking for a simple side dish that is a breeze to make, this is perfect! The ingredients are pretty simple and all you got to do is mix everything. You can chill this salad first before serving or serve it immediately. It is amazing either way. And this tastes even better after a day or two because the dressing soaks well into the veggies. It is an excellent afternoon side when you have friends visiting and you are looking for something to share.

Oh my God! This Strawberry cake is legit! Its flavor will make you want to eat a lot! I recently learned about this recipe and I am so glad that I tried it because I never would have tasted perfection! Give this one a try and I am 100 percent certain that you are gonna love it. Ingredients

For the Bread:

3/4 cup granulated sugar

1/2 cup milk

1/2 cup oil

1 large egg

1 teaspoon vanilla extract or almond extract

2 cups all-purpose flour

2 teaspoons baking powder** (see notes)

1/4 teaspoon salt

2 cups diced strawberries

2 tablespoons all-purpose flour

For the Glaze:

2 cups powdered sugar

2 tablespoons melted butter

1/3 cup finely diced strawberries

1/2 teaspoon vanilla extract or almond extract

1-2 tablespoons heavy cream or milk** (optional)

How to make Strawberry Bread

Step 1: Ready the oven and preheat to 350 degrees.

Step 2: In a medium mixing bowl, add in the milk, sugar, vanilla, oil, and egg.

Step 3: In another medium mixing bowl, add the flour, baking powder, and salt. Stirn until well mixed.

Step 4: Transfer the dry ingredients into the bowl with the wet ingredients. Stir until well mixed.

Step 5: In a small mixing bowl, add 2 tablespoons of flour and strawberries. Coat the strawberries fully. Add in the coated strawberries into the batter.

Step 6: Transfer the batter into a 9 x 5-inch greased bread pan.

Step 7: Place inside the preheated oven and bake for 50 to 55 minutes at 350 degrees or until a toothpick inserted in the middle of the bread comes out clean.

Step 8: Remove the bread from the oven and let it sit on a wire rack to cool to room temperature.

To make the Glaze: 

Step 1: In a medium mixing bowl, add the melted butter, powdered sugar, extract, and diced strawberries. Stir until well mixed.

Step 2: Spread the glaze on top of the cooled bread then slice.

Slap Your Mama It’s So Delicious Southern Squash Casserole

Everyone will love squash after eating this amazing dish! This my personal favorite. I love how the squash incorporates well with the rest of the ingredients. For some people who are not fans of squash, this will surely change your mind about this vegetable. If you want, you can add cooked chicken or rice as well. Give a try and enjoy it!

Ingredients

3 lb yellow squash, sliced or diced

1/2 cup diced Vidalia onion, optional

1 can cream of mushroom or chicken soup, 10.5 oz.

1 cup mayonnaise

1 egg

8 oz shredded cheddar cheese (sharp is my favorite)

1 teaspoon salt

1/2 teaspoon fresh ground black pepper

FOR THE TOPPING:

2 sleeves of Ritz crackers, crushed

1 stick melted butter

Step 1: Ready the oven and preheat to 350 degrees.

Step 2: Wash the squash and slice into small dices. (Small sliced squash will make it easy to tenderize.)

Step 3: Place the sliced squash into a large mixing bowl.

Step 4: In another large mixing bowl, add the soup, eggs, mayo, and onions. Sprinkle salt and pepper to taste then stir until well mixed.

Step 5: Add in the sliced squash and stir until well combined.

Step 6: Transfer the mixture into a casserole dish meant for baking.

Step 7: Place the crackers into a resealable plastic bag then crush.

Step 8: Add in the crushed crackers into a medium mixing bowl.

Step 9: Place the butter inside the microwave and allow it to melt.

Step 10: Add the melted butter into the bowl with the crushed crackers and stir.

Step 11: Add in the crackers and butter mixture over the casserole.

Ingredients

  • 3 lb yellow squash, sliced or diced
  • 1/2 cup diced Vidalia onion, optional
  • 1 can cream of mushroom or chicken soup, 10.5 oz.
  • 1 cup mayonnaise
  • 1 egg
  • 8 oz shredded cheddar cheese (sharp is my favorite)
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • FOR THE TOPPING:
  • 2 sleeves of Ritz crackers, crushed
  • 1 stick melted butter

Instructions

Step 1: Ready the oven and preheat to 350 degrees.

Step 2: Wash the squash and slice into small dices. (Small sliced squash will make it easy to tenderize.)

Step 3: Place the sliced squash into a large mixing bowl.

Step 4: In another large mixing bowl, add the soup, eggs, mayo, and onions. Sprinkle salt and pepper to taste then stir until well mixed.

Step 5: Add in the sliced squash and stir until well combined.

Step 6: Transfer the mixture into a casserole dish meant for baking.

Step 7: Place the crackers into a resealable plastic bag then crush.

Step 8: Add in the crushed crackers into a medium mixing bowl.

Step 9: Place the butter inside the microwave and allow it to melt.

Step 10: Add the melted butter into the bowl with the crushed crackers and stir.

Step 11: Add in the crackers and butter mixture over the casserole.

Crisp Cucumber Salsa

I always love a nice and refreshing salad/dip. They are the quickest and easiest to make. And they require fresh ingredients that you can easily find in your local market. This cucumber salsa is my new addiction. I stumbled upon this recipe not long ago. My husband fell immediately in love with this. He said he can eat this every day! Which I think is possible because he is crazy with cucumbers! It is technically a dip but he loves to eat this salsa as is. This is great with fish and chips, amazingly goes well with chops and fried chicken. A must-have in my house.

Like what I said my husband is a cucumber freak. He eats them as is or makes them into a salad with some vinegar, salt, sugar, and a dash of pepper. And he is fond of this cucumber salsa. I remembered one time he goes home with two plastic bags of cucumber and begs me to make him this cucumber salsa! You can tell how obsessed he is with this crisp, refreshing, creamy, but not overwhelmingly rich cucumber salsa.

Ingredients

2 cups finely chopped seeded peeled cucumber

1/2 cup finely chopped seeded tomato

1/4 cup chopped red onion

2 tablespoons minced fresh parsley

1 jalapeno pepper, seeded and chopped

4-1/2 teaspoons minced fresh cilantro

1 garlic clove, minced or pressed

1/4 cup reduced-fat sour cream

1-1/2 teaspoons lemon juice

1-1/2 teaspoons lime juice

1/4 teaspoon ground cumin

1/4 teaspoon seasoned salt

Amish Onion Fritters

These onion fritters are the best! I never thought it would be this good. The first time I tried it, I was completely blown away by the amazing flavor and crispiness of these little treats. I learned about this recipe with the help of my best friend. She has a small food truck where she cooks mostly Cuban cuisine. However, these fritters are her best-selling food! Give this one a try and I am one hundred percent sure that you are gonna love it! Just follow all the simple steps that I have provided and you are in for a treat! Also, you can tweak it a little. For example, you can add bacon for a nice and meaty taste. I have tried it once or twice and it is awesome! You can also try adding ground pork. It certainly goes well with the rest of the ingredients too. By the way, make sure to follow the steps and do not skip for a perfect result. Good luck and enjoy it!

Ingredients

3/4 cup flour

1 tablespoon sugar

1 tablespoon cornmeal

2 teaspoon baking powder

1-2 teaspoons salt-according to taste

3/4 cup milk

2 1/2 cups chopped onions

How to Make Amish Onion Fritters

Step 1: In a large mixing bowl, add flour, sugar, cornmeal, baking powder, and salt. Stir until well mixed.

Step 2: Add in the milk and stir until well blended and thick.

Step 4: Place a skillet on the stove and turn the heat to medium-high.

Step 5: Add 1/2 of oil and allow it to bubble slightly.

Kentucky Butter Cake

This cake is super moist, buttery with an amazing four-ingredient glaze. A homemade dessert that is irresistible and delicious in every way!

Ingredients

FOR THE BUTTER CAKE:

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter

2 cups of sugar

1 cup milk

1 tablespoon white vinegar

4 large eggs

2 teaspoons vanilla

FOR THE BUTTER GLAZE:

1 cup of sugar

1/2 cup unsalted butter

3 tablespoons brandy (water can be substituted)

1 teaspoon vanilla extract

How to Make Kentucky Butter Cake

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Then, grease and flour well a 10-inch or 12 cups bundt pan.

Step 3: Whisk the flour, baking powder, baking soda, and salt in a large bowl.

Step 4: In another bowl, cream the butter and sugar for about 5 minutes until light and fluffy.

Step 5: In a small bowl or measuring cup, mix the milk with the vinegar.

Step 6: Add in the eggs one at a time into the butter-sugar mixture. Keep stirring until well mixed before adding in the vanilla. Then, mix in the milk-vinegar mixture alternately with the dry ingredients. Stir until well combined.

Step 7: Transfer the mixture in spoonfuls into the prepared bundt pan.

Step 8: Place inside the preheated oven and bake for about 50 to 60 minutes or until the toothpick inserted in the middle comes out clean.

Step 9: Once done, remove from the oven but let the cake stay in the pan.

Step 10: Use the smaller end of a chopstick or similar sized tool to poke holes in the cake. Make sure to not go all the way through the bottom.

Step 11: Meanwhile, combine the sugar, butter, and brandy in a small saucepan. Cook over medium-low heat, stirring frequently until melted. Make sure to not bring the mixture to a boil. Then, remove from the heat and stir in the vanilla.

Step 12: Carefully and gradually pour the glaze over the poked holes and let the cake cool for at least 30 minutes before removing it from the pan.
