I always love a nice and refreshing salad/dip. They are the quickest and easiest to make. And they require fresh ingredients that you can easily find in your local market. This cucumber salsa is my new addiction. I stumbled upon this recipe not long ago. My husband fell immediately in love with this. He said he can eat this every day! Which I think is possible because he is crazy with cucumbers! It is technically a dip but he loves to eat this salsa as is. This is great with fish and chips, amazingly goes well with chops and fried chicken. A must-have in my house.
Like what I said my husband is a cucumber freak. He eats them as is or makes them into a salad with some vinegar, salt, sugar, and a dash of pepper. And he is fond of this cucumber salsa. I remembered one time he goes home with two plastic bags of cucumber and begs me to make him this cucumber salsa! You can tell how obsessed he is with this crisp, refreshing, creamy, but not overwhelmingly rich cucumber salsa.

Ingredients
2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 tablespoons minced fresh parsley
1 jalapeno pepper, seeded and chopped
4-1/2 teaspoons minced fresh cilantro
1 garlic clove, minced or pressed
1/4 cup reduced-fat sour cream
1-1/2 teaspoons lemon juice
1-1/2 teaspoons lime juice
1/4 teaspoon ground cumin
1/4 teaspoon seasoned salt

How to make Crisp Cucumber Salsa
Step 1: Combine the cucumber, tomato, red onion, fresh parsley, jalapeno pepper, cilantro, and garlic in a small bowl. Set aside.
Step 2: In a separate bowl, mix the sour cream, lemon juice, cumin, and seasoned salt.
Step 3: Then, pour the sour cream mixture into the cucumber mixture and gently toss to coat.
Step 4: Once coated, serve immediately with chips. Enjoy!
