6 cups stale white or wheat bread cut or torn into small pieces (or a mix of both)
3 cups any kind of apple peeled and diced small
5 whole Eggs, beaten
3 cups half and half
1 cup Splenda brown sugar blend
1/4 teaspoon salt
2 teaspoons vanilla extract
2 teaspoons apple pie spice
1 stick butter, cold
1 can(s) sweetened condensed milk
1 bag Kraft caramels, unwrapped
How to make Caramel Apple Bread Pudding
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: With shortening or non-stick cooking spray, lightly grease or spray a 9 x 13-inches baking dish.
Step 3: Add the bread cubes and pieces of apple to a large bowl. Toss, then transfer to the prepared baking dish.
Step 4: Combine the rest of the ingredients except for the butter in the same large bowl. Pour this over the bread and apple mixture while whisking contentiously to make that the spices are distributed evenly.
Step 5: Combine the bread and egg mixture gently. Ensure that the pieces of bread are soaked in part of the egg and milk mixture. Let it stand for at least 15 minutes or longer.
Step 6: Into a microwaveable dish, place the condensed milk. Add half of the caramels and heat them in the microwave for a minute. Stir, then microwave again in 30-second intervals until the caramels are melted and blended smoothly with the condensed milk, making sure to add the whole bag of caramels to the milk.
Step 7: Dab butter over the bread after the egg and milk mixture has mostly soaked into the bread. Drizzle with half of the caramel mixture. Bake in the preheated oven for about 40 to 50 minutes or until the middle is set but not dry.
Step 8: Take the baking dish out of the oven and let the pudding sit for at least 5 minutes.
Step 9: Warm the caramel for about 18 seconds to thin it and drizzle over each serving. Enjoy with a scoop of vanilla ice cream.
