2 Roma tomatoes
1 c. shredded mozzarella cheese or goat cheese
½ c. balsamic syrup
2 tablespoons basil
salt and pepper

Step 1: Place the chicken breasts between two pieces of plastic wrap. Pound them thin, then trim off any fat.
Step 2: Over medium-high heat, heat a nonstick skillet.
Step 3: Season the chicken breasts with salt and pepper on both sides.
Step 4: Once the oil is hot, add the chicken breasts into the skillet and cook for about 4 to 6 minutes on each side until brown. The cooking time varies depending on the thickness of the chicken.
Step 5: Drizzle the chicken with the balsamic syrup once cooked through, then top with mozzarella and tomato. Turn the heat off and cover the pan to allow the cheese to melt. This takes about a minute or two minutes.
