I love a good-old pasta dish. They are very quick and easy to make using ingredients we can already find in our pantry. I have my favourite pasta recipes, and this Cajun Chicken Pasta is one of my top choices. The lush chicken, fresh vegetables, melty Parmesan cheese, and Cajun seasoning in a scrumptious creamy sauce is to die for! Serve this with a simple side salad and garlic bread for a simple, quick, and very satisfying meal perfect for the crowd.

2-3 chicken breasts, cut into chunks
3 tbsp unsalted butter
1 1/2 tsp minced garlic
4 oz. cream cheese softened
1 cup milk
8 oz. bow tie pasta
3/4 cup freshly grated Parmesan cheese
1 red bell pepper, cut into slices
1 yellow bell pepper, cut into slices
1/2 tsp black pepper
1/2 tsp salt
3 tsp Cajun seasoning, more or less to taste
HOW TO MAKE CAJUN CHICKEN PASTA
Step 1: Cook the pasta according to the package directions until al dente. Drain the pasta when done and rinse under cold water. Set aside.
Step 2: In a large skillet, melt the butter over medium heat. Add the minced garlic to the skillet once the butter has melted and saute for about 30 seconds.
Step 3: Add the cubed chicken to the skillet followed by the red and yellow bell peppers, Cajun seasoning, and season with salt & pepper. Cook for another 4 to 5 minutes or until the chicken is cooked through.
Step 4: Then, add the milk along with the softened butter. Mix well until the cream cheese has melted and the sauce is creamy. Now, add the cooked pasta noodles and Parmesan cheese. Stir well until blended.
Step 5: Take off the heat when done and serve the Cajun Chicken Pasta immediately with a simple green salad or garlic bread. Enjoy!
