1 pound lean ground beef
1 medium onion chopped
3 cloves garlic minced
1/2 tsp paprika
1/2 tsp onion powder
1/4 tsp ground cayenne pepper
2 tbsp brown sugar
1 (15 oz.) can tomato sauce
1 (14.5 oz.) can low sodium beef broth
1 c. long-grain white rice (uncooked)
2 tbsp olive oil
1 medium head green cabbage chopped
1 1/2 c. finely shredded sharp cheddar
1 1/2 c. finely shredded Monterey Jack Cheese
HOW TO MAKE CABBAGE ROLL CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees. Using a nonstick cooking spray or olive oil spray, grease a 9 x 13-inch casserole dish.
Step 2: Cook the ground beef until brown. Halfway through browning, add the onion and cook for a minute more while stirring endlessly. From the skillet, drain the excess grease once done.
Step 3: To the ground beef and onion, add the paprika, onion powder, cayenne, brown sugar, tomato sauce, beef broth, and rice. Bring to a low boil, then adjust to a simmer before covering the pot. Allow the mixture to simmer for about 20 minutes until the rice is tender.
Step 4: In a large skillet, heat a tbsp olive oil over medium heat. Once hot, add half of the chopped cabbage to the skillet and cook for about 5 to 7 minutes until slightly tender.
Step 5: Into the bottom of the prepared casserole dish, spread the cabbage, top with half of the ground beef mixture, and sprinkle with half of the cheeses, then mix.
Step 6: In a large skillet, heat a tbsp olive oil over medium heat. Add half of the chopped cabbage once the oil is hot and cook for about 5 to 7 minutes until a little tender. Over the cheeses in the casserole dish, spread the cabbage, top with the rest of the half of the beef mixture, then the rest of the cheese.
Step 7: Using aluminium foil, tent the casserole. Place in the preheated oven and bake for about 20 minutes. Uncover and continue to bake for 20 minutes more until the cheese turned lightly brown.
