This is my family’s favourite holiday side dish. So good, I have to make it on weekdays as well. I bet your pickiest eaters will never turn down greens again with this cheesy, melty broccoli casserole topped with crunchy Ritz cracker.
INGREDIENTS
3-4 crowns fresh broccoli, cooked and drained (NOTE: You will need 3-4 crowns, not stalks)
1 c. real mayonnaise
1 can, cream of chicken soup
4 tbsp butter, melted
1/4 c. diced white onion
2 Eggs
1 tsp salt
1/4 tsp pepper
1-1/2 c. shredded sharp cheddar cheese
1 sleeve, Ritz crackers, crushed
HOW TO MAKE BROCCOLI CASSEROLE ULTRA EASY AND ULTRA CHEESY
Step 1: Prepare the oven. Preheat it to 350 degrees. With nonstick cooking spray, grease a 9 x 13-inch baking pan.
Step 2: Into bite-sized pieces, cut the broccoli crowns, then steal or boil the pieces until tender.
Step 3: Into the bottom of the prepared casserole dish, spread the cooked broccoli.
Step 4: Pour the melted butter, mayonnaise, cream of chicken soup, and diced white onion in a mixing bowl. Stir well.
Step 5: Add in the eggs, a cup of shredded cheese, and season with salt and pepper. Mix well until combined.
Step 6: Over the broccoli in the pan, spread the mixture, and toss to evenly coat.
Step 7: On top of the broccoli casserole, sprinkle the rest of the shredded cheese and cover with the crushed Ritz crackers.
Step 8: Place in the preheated oven and bake for about 30 to 40 minutes or until completely heated.
Step 9: Serve as a side dish. Enjoy!
