Whenever I have cravings for anything veggies, this Broccoli Fritters is my go-to. Basic but so good and super easy and quick to throw together.
INGREDIENTS
1 pound steamed broccoli florets
2 jumbo Eggs
1/2 c. shredded Parmesan cheese
4 tablespoons flour
1 garlic clove, minced
salt and pepper, to taste
vegetable oil, for frying
HOW TO MAKE BASIC BROCCOLI FRITTERS
Step 1: Add the broccoli florets into a medium-sized pot with boiling salted water. Cook the florets for about 5 minutes until they are fork-tender. When done, drain and transfer the broccoli to a cutting board. Slice them into very small pieces with a large and sharp knife.
Step 2: Combine the chopped broccoli, eggs, Parmesan, flour, and garlic in a medium-sized bowl. To taste, season with salt and pepper, then stir to combine.
Step 3: Over medium heat, heat a cast-iron or non-stick pan. Add oil and swirl to coat the pan. Place about 2 to 3 tbsp mounds of the broccoli mixture. Using a spatula, lightly flatten the mounds and make sure to space them out at least an inch apart.
Step 4: Cook the fritters for about 2 to 3 minutes. Flip and continue to cook the other side for a minute or two more until golden.
Step 5: Enjoy the fritters warm with yoghurt or sour cream.
NOTE:
You can as well bake the fritters. Simply follow steps 1 to 3, then arrange them on a hot, oven-safe skillet. Bake in a 425 degrees F preheated oven for about 10 to 13 minutes.
