2 1/8 cups white sugar
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
2 teaspoons lemon juice
1 1/2 cups mashed bananas
1/2 cup butter, softened
1 (8 ounces) package cream cheese, softened
3 1/2 cups confectioners’ sugar
1 teaspoon vanilla extract
How to make Banana Cake
Step 1: Ready the oven and preheat to 135 degrees C or 275 degrees F.
Step 2: Apply cooking spray in a 9×13-inch pan then sprinkle flour.
Step 3: Add mashed potato, bananas, and lemon juice in a small mixing bowl. Stir until well-mixed.
Step 4: In another medium mixing bowl, add in baking soda, flour, and salt. Whisk until well-mixed then set it aside.
Step 5: Add 2 1/8 cups of sugar and 3/4 cup of butter in a large bowl. Beat until fluffy and creamy.
Step 6: Add eggs one at a time and beat into the mixture followed by 2 teaspoons of vanilla.
Step 7: Add the buttermilk and flour mixture alternately then beat until well-blended.
Step 8: Transfer the banana mixture into the bowl and stir.
Step 9: Transfer the batter into the greased and floured baking pan.
Step 10: Place the baking pan inside the preheated oven and bake for 1 hour or until the toothpick comes out clean after inserting it in the middle of the cake.
Step 11: Remove the pan from the oven and refrigerate by placing inside the freezer for 45 minutes to make the cake extra moist.
To make the frosting:
Step 1: Add cream cheese and 1/2 cup of butter in a large bowl. Beat until smooth and creamy then add in 1 teaspoon of vanilla.
Step 2: Add in the confectioner’s sugar and mix at low speed until blended then transition to high until the texture becomes smooth.
Step 3: Spread the frosting on top of the chilled cake.
Step 4: Serve cold and enjoy!
