Banana Cake with Buttercream Frosting

I love this Banana Cake so much! The frosting alone is more than enough for me, let alone the cake itself. Try it now. Enjoy!

Ingredients:

BANANA CAKE

3 cups of sifted cake flour

1 Tablespoon baking powder

1 1/2 teaspoons baking soda

3/4 teaspoon salt

3/4 cup shortening

2 1/4 cups granulated sugar

3 Eggs, well beaten

1 1/2 cups mashed ripe bananas (about 4 bananas)

1 1/8 cups buttermilk

1 1/2 teaspoon vanilla extract

BUTTERCREAM FROSTING

3/4 cup hot milk

1/2 cup butter

1/2 cup shortening (butter flavoured Crisco not recommended)

1 teaspoon vanilla extract

1 Tablespoon cornstarch

1 cup granulated sugar

Directions:

To Make the Banana Cake:

Step 1: In a medium mixing bowl, sift the flour, baking powder, soda, and salt.

Step 2: In another mixing bowl, add the shortening, then slowly add the sugar while beating until creamy.

Step 3: Add in the bananas and eggs. Beat until well combined.

Step 4: Transfer the flour mixture into the bowl with the shortening mixture along with the vanilla and buttermilk.

Step 5: Apply cooking spray and sprinkle flour in two 9-inch layer pans.

Step 6: Transfer the mixture into the prepared pans and spread it evenly on the bottom.

Step 7: Place the pans inside the oven and bake for 25 to 30 minutes at 375 degrees F.

Step 8: Remove the pans from the oven and let them sit at room temperature to cool.

To Make the Butter Cream Frosting:

Step 1: Place a saucepan on the stove and turn the heat to low.

Step 2: Add the milk and allow it to become hot.

Step 3: In a small mixing bowl, add the shortening and butter. Beat until creamy.

Step 4: Add in the sugar, vanilla, and cornstarch slowly and beat every addition.

Step 5: Transfer the hot milk into the sugar mixture and beat continuously until well mixed.

Step 6: Frost the cooled cake. Serve and enjoy!
