Ingredients
1 c. light mayonnaise or Greek yoghurt (I used ½ of each)
6 chicken breasts
1 teaspoon garlic powder
1/2 teaspoon pepper
1 1/2 teaspoons seasoning salt
1/2 c. Parmesan cheese and reserve more for top
HOW TO MAKE BAKED PARMESAN CHICKEN
Step 1: Prepare the oven. Preheat it to 375 degrees. Using cooking spray, grease a 9 x 13-inch pan. In the pan, lay the chicken.
Step 2: Combine the remaining ingredients (light mayonnaise or Greek yoghurt or use half of each, garlic powder, pepper, seasoning salt, and Parmesan cheese) until everything is well incorporated. Over each piece of chicken, evenly spread the mixture. This will keep the chicken from getting dry.
Step 3: Over the chicken, sprinkle the fresh Parmesan.
Step 4: Place the pan in the preheated oven and bake the chicken for about 45 minutes, uncovered.
