1 pound Boneless skinless chicken breast cut into 4 – 4-ounce pieces
4 tbsp cream cheese
1/4 c. Pepperjack cheese, shredded
2 tbsp green onion, chopped
4 to 8 pieces of bacon
How to make Bacon Wrapped Cream Cheese Stuffed Chicken Breast
Step 1: Into four equal pieces, cut the chicken and pound to about 1/4 inch thickness.
Step 2: Combine the softened cream cheese, chopped green onion, and pepper jack cheese. Into the middle of each chicken piece, place 1/4 of this mixture.
Step 3: Roll the chicken breast up beginning at the long side, making sure that the cheese mixture stays intact.
Step 4: Around the chicken breast, wrap 1 to 2 bacon slices. If needed, secure with a toothpick.
Step 5: On a baking sheet with an edge or baking sheet, place the wrapped chicken. Bake in a 375 degrees F preheated oven for about 30 minutes.
Step 6: To completely brown and crisp the bacon, broil the topside for approximately 5 minutes. Flip and broil the bottom side for 3 minutes more.
Step 7: Serve straight off.
Notes:
You can use only 1 piece of bacon to wrap around the chicken breast. But if you want to fully wrap the chicken, use two.
One large chicken breast that is cut in half is usually equated to a pound of chicken. So you’ll have 4-ounce pieces, cut each half in half again.
During baking baste the bacon-wrapped chicken with your preferred grilling sauce, marinade, chilli sauce, or sweet and sour sauce.
