How to make Bacon Wrapped Chicken
Step 1: Combine the rub ingredients (brown sugar, smoked paprika, cayenne pepper, garlic powder (or granules), onion powder, freshly ground pepper, and salt) in a small bowl.
Step 2: Sprinkle and evenly spread on both sides of the chicken breasts half of the brown sugar spice mix.
Step 3: Wrap the bacon around the chicken breast. Use 2 to 4 pieces of bacon depending on the size of the chicken breast and the length of the bacon, making sure that the chicken breast is fully wrapped. When wrapping the chicken breasts, do it as gently as possible and as tight as you can to not tear the bacon. To secure the bacon and for a neat even look, try to begin and end wrapping seam side down.
Step 4: In the baking dish, arrange the bacon-wrapped chicken breast.
Step 5: Over the chicken, evenly sprinkle the rest of the brown sugar spice mix.
Step 6: In the preheated 375 degrees F or 185 degrees C oven, bake the bacon-wrapped chicken breast for about 25 to 30 minutes. For juicy chicken and extra flavour, spoon over the pan drippings every 10 minutes.
Step 7: If a thermometer inserted in the middle of the chicken reads 165 degrees F, the chicken is cooked through. Alternately, you can cut the chicken breast in the centre. If the meat is white all the way through, the chicken is done.
Step 8: This step is optional but recommended if you want the bacon crispy. Broil the bacon-wrapped chicken breast for at least 2 minutes.
Step 9: When done, take the wrapped chicken out of the oven and garnish it with some fresh chopped parsley. Generously spoon the pan drippings over the wrapped chicken and serve over mashed potatoes, alongside roasted potatoes, or your favourite veggies. Enjoy!
Notes:
For this recipe, you can use either chicken breasts, chicken thighs, chicken tenders, or even bone-in chicken wings.
I would recommend using long thick-cut or 1/8-inch thick strips of streaky/fatty bacon.
The number of bacon to use may vary depending on the size of the chicken breast.
In place of brown sugar, use maple syrup or honey.
For even cooking, regularly baste the bacon-wrapped chicken with pan drippings.
Slightly decrease the temperature if the bacon starts to smoke at 375 degrees F.
To make the bacon golden and crispy, broil for at least a minute or two. Although, this is optional but recommended.
