Ingredients
21 ounces can apple pie filling
6 8-inches tortillas
1 teaspoon cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water
How to make Apple Enchiladas
Step 1: To the middle of each tortilla, evenly spoon around a heaping quarter cup of pie filling. On top, sprinkle the cinnamon. Roll the tortilla up, tucking the edges. In the prepared 9 x 13-inch casserole dish, place the roll-ups seam-side down.
Step 2: Mix the butter with white sugar, brown sugar, and water in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Decrease the heat and simmer for about 3 minutes.
Step 3: Over the enchiladas, pour the sauce and allow it to sit for at least 45 minutes. Then, place in 350 degrees preheated oven and bake for about 20 minutes until golden.
Step 4: Remove from the oven when done and serve the enchiladas with a scoop of vanilla ice cream or a side to ham. Enjoy!
