5 Ingredient Chicken Tortilla Soup

This is another excellent one-pot soup that anyone can make with 5-ingredients and in less than twenty minutes! It’s crazy delicious especially topped with your favourite toppings such as sour cream, cheese, avocado chinks, and tortilla strips or crushed tortilla chips.

If anyone asks me what’s my favourite comfort food, I’ll tell them without hesitation that it includes cheese, chicken, beans, and spices. I would never miss this amazing soup for the world! This is perfect plain but I want it with pile with my fave toppings.

Ingredients

2 c. cooked chicken shredded or chunked

1 can (16 ounces) refried beans

1 can (15 ounces) chilli beans (do not drain)

1 can (15 ounces) petite diced tomatoes (do not drain)

2 c. chicken broth

1 tsp garlic powder

1 tsp cumin

1 tsp chilli powder

1 tsp onion powder

shredded cheese, tortilla chips, sour cream, avocado chunks for toppings

How to make 5 Ingredient Chicken Tortilla Soup

Step 1: Place all the ingredients (cooked chicken, refried beans, chilli beans, petite diced tomatoes, chicken broth, garlic powder, cumin, chilli powder, and onion powder) in a large soup pot. Stir everything, then bring to a boil on medium-high heat. Adjust the heat to low once boiling, then put the lid on. Allow simmering for about 10 to 20 minutes.

Step 2: Once done, serve the chicken tortilla soup with your preferred toppings such as shredded cheese, tortilla chips, sour cream, avocado chunks. Enjoy!

Notes:

If using full salt chicken broth, you can skip the additional salt. But if you prefer to use low-sodium chicken broth, you may need to add salt. If needed, adjust the salt according to taste after the soup is done seasoning.

Feel free to customize the seasonings. If you want some heat, you can add cayenne pepper, or you can use fresh garlic.
