When I saw this recipe, the first thing that came to my mind is this is a genius idea! I have never thought of putting grated zucchini to meatloaf, so I immediately give this a try and I instantly loved it! It is made with only a few pantry-friendly ingredients. and I can easily whip this up in less than an hour! Not only that this is perfect for picky eaters, but this is excellent for people who are watching the calories and fat intake. I love to serve this with my favourite veggies, a simple salad, or mashed potatoes. The leftovers are awesome for sandwiches, too1

Ingredients
1 Egg, slightly beaten
1/4 c. onion, very finely chopped
3/4 pound lean ground beef
1/4 c. bread crumbs, plain
1-2 cloves garlic, minced
1 c. zucchini, grated
1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 teaspoon dried oregano leaves
TOPPING:
1/4 teaspoon mustard
1/2 tablespoon brown sugar
1 tablespoon ketchup
How to make Zucchini Meatloaf
Step 1: Into a large bowl, place the grated zucchini, ground beef, egg, onion, garlic, bread crumbs, and onion. Sprinkle with paprika, oregano, salt & black pepper to taste. Mix well until incorporated.
Step 2: Into a lightly greased loaf pan, place the meatloaf. Put in a preheated 350 degrees F or 175 degrees C oven and bake the meatloaf for approximately 40 minutes or until completely cooked. When done, take the meatloaf out of the oven.
Step 3: Whisk the ketchup, mustard, and brown sugar in a small bowl until blended. Over the zucchini meatloaf, pour this over, and return to the oven. Continue to bake for additional 15 minutes.
