These amazing Zucchini Garlic Bites are an Italian-inspired appetizer with shredded zucchini, garlic, Parmesan cheese, fresh herbs served alongside the marinara dipping sauce. They’re a favourite at my house! And perfect to serve not only as an impressive appetizer but also as a side dish or even a kid’s meal.
Ingredients
1 c. shredded zucchini drained well
1 clove garlic grated fine
1/3 c. breadcrumbs
1/4 c. grated Parmigiano-Reggiano cheese
1 large egg
2 tbsp chopped fresh chives (or 1 tbsp dried chives)
1 tbsp chopped fresh parsley (or 1/2 tbsp dried)
1 tsp chopped fresh basil (or 1/2 tsp dried)
1 tsp chopped fresh oregano (or 1/2 tsp dried)
pinch of salt and pepper
tomato sauce for dipping
How to make Zucchini Garlic Bites
Step 1: Prepare the oven. Preheat it to 400 degrees F. And using olive oil or nonstick spray, lightly grease a baking sheet and set aside.
Step 2: Into a clean towel, grate the zucchini using a box grater. Roll the towel up, twisting to wring the moisture out.
Step 3: Using the small holes on the box grater, grate the garlic. Then, into a medium bowl, place the shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, salt, and pepper. Mix well until everything is combined.
Step 4: Using your hands, shape a tbsp mixture, patting it into a small ball. On the prepared baking sheet, place the balls.
Step 5: Place in the preheated oven and bake the balls for about 15 to 18 minutes until golden. Remove from the oven when done and serve the zucchini garlic bites warm with marinara sauce.
Notes:
To freeze, just follow the recipe as is, then allow the zucchini bites to cool before placing them on a large baking sheet in a single layer. Put in the freezer and flash freeze for an hour. Take them out of the freezer and transfer the bites into a freezer bag, then store them in the freezer for up to 4 months.
To reheat, transfer the frozen zucchini garlic bites on a baking sheet and heat in a preheated 400 degrees F oven for approximately 10 to 15 minutes until the bites are heated through and crispy.
