FOR THE ZUCCHINI CAKE:
3 cups flour
1 cup of sugar
1 cup brown sugar
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
3 cups grated zucchini
1 1/4 cups vegetable oil
4 eggs
1 teaspoon vanilla extract
3/4 cup chopped walnuts
FOR THE BROWN SUGAR CREAM CHEESE FROSTING:
12 oz cream cheese (1 1/2 boxes)
4 tablespoons unsalted butter softened
3 tablespoons light brown sugar
2 teaspoons vanilla extract
How to Make Zucchini Cake
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Then, grease and flour a 9 x 13-inch baking dish and set aside.
Step 3: Whisk the flour, sugar, brown sugar, salt, baking soda, baking powder, cinnamon, nutmeg, and allspice in a medium bowl.
Step 4: In another large bowl, combine the grated zucchini, vegetable oil, eggs, and vanilla extract.
Step 5: Now, stir the flour mixture into the zucchini mixture in various intervals. Making sure to mix just until combined.
Step 6: Then, fold in the chopped walnuts.
Step 7: Transfer the batter into the prepared baking dish and place inside the preheated oven to bake for approximately 40 to 45 minutes. To check the doneness, insert a toothpick in the middle. Once it comes out clean the or with moist crumbs the cake is done. Making sure to not overbake and check the cake after 40 minutes and every after 5 minutes thereafter.
Step 8: Remove the cake from the oven and allow it to cool completely.
Step 9: Meanwhile, to make the frosting, combine the cream cheese, butter, brown sugar, and vanilla in a mixing bowl. Use a mixer to beat until the mixture is light, fluffy, and smooth. Once the cake is fully cooled, spread the frosting onto the cake and chill to set. Enjoy!
