ZUCCHINI AND YELLOW SQUASH AU GRATIN

This Au Gratin has the perfect combination of zucchini, yellow squash, onions, and garlic. It’s a luscious dish that is incredibly easy and quick to make. Creamy, cheesy, and a filling meal excellent for all the summer squash lovers out there!

Summer is almost at its pick and what better way to end the season with a bang but by making this Zucchini and Yellow Squash Au Gratin. Takes only ten minutes to prep using only a few simple ingredients and another fifteen to twenty minutes of baking. Pretty much it. Enjoy the rest of summer with this insanely delicious Au Gratin!

INGREDIENTS

2 tbsp butter

1/2 onion thinly sliced

1 small zucchini sliced in rounds 1/8 to 1/4” thick

1 small yellow squash sliced in rounds 1/8 to 1/4” thick

2 large cloves garlic minced

1/2 c. heavy cream

1/4 c. grated Parmesan

1 c. shredded smoked Gouda

HOW TO MAKE ZUCCHINI AND YELLOW SQUASH AU GRATIN

Step 1: Prepare the oven. Preheat it to 450 degrees.

Step 2: In an oven-proof skillet, melt the butter over medium heat. Once the butter has melted, add the onion to the skillet and cook for about 5 minutes until the edges begin to brown. Add the garlic and continue to cook for a minute mote. Then, add the cream and let it simmer until bubbly and beginning to thickens. Gradually stir in the Parmesan before adding in the zucchini and yellow squash. Cook for another 4 to 5 minutes.

Step 3: On top, sprinkle the smoked Gouda. Transfer the skillet to the preheated oven and bake the Au Gratin for about 15 to 20 minutes or until the cheese is golden brown.

NOTE:

For this recipe, I used smaller zucchini. If using larger zucchini, I suggest doubling the cream and Parmesan. Make sure to adjust the cooking time if using large zucchini.
