Wicked Peach Cobbler

Cook time: 40 mins | Serves: 4–6

This is an incredible Peach Cobbler. A wicked treat perfect for the entire family! Make this in a breeze using only a few simple ingredients. If you love a pie with a nice crust, then this is it! Make sure to use fresh peaches for the best result, but you can use frozen if that is what is available.

Ingredients

pie crust for double-crust pie

3 pounds medium peaches, peeled, pitted, and cut into 1/4” slices

2 tablespoons cornstarch

1 cup sugar

2 teaspoons fresh lemon juice

1/2 teaspoon ground cinnamon, plus more for the top of the crust

4 tablespoons (1/2 stick) butter, chilled, cut into small pieces

How to make Wicked Peach Cobbler

Step 1: Prepare the oven. Preheat it to 375 degrees. Lightly grease an 8-inch square baking dish.

Step 2: Place the peaches, cornstarch, sugar, lemon juice, and cinnamon in a medium bowl. Toss to combine, then fold in the butter. Into the prepared dish, spoon half of the peach mixture.

Step 3: Roll the small dish of dough on a lightly floured work surface to about 8-inch square with 1/8-inch thickness. As needed, trim the dough. In the baking dish, place this over the peaches and top with the rest of the peaches.

Step 4: Into an 11-inch square, roll the larger dish of dough out to about 1/8-inch thickness. As needed, trim the dough. Fit this over the baking dish, allowing the dough to hand down on the sides. Onto the top edge of the dish, firmly pinch the dough. And onto the side of the dish, press the overhanging dough. On top, slice a couple of slits. To catch any drips, put the dish on a baking sheet.

Step 5: Place in the preheated oven and bake for about 40 minutes until the fruit juices are bubbling and the top of the cobbler is golden brown. Sprinkle the cinnamon on top and serve the cobbler warm or at room temperature. Enjoy!
