I love this classic Southern recipe. It’s my mom’s top pick pie recipe. Very savoury and the best pie that you can whip up any time! Made with tons of sauteed onions, crackers (Ritz or saltines), eggs, cheese, milk, and butter. I surely already found the best side dish!

This onion pie might sound strange to some, but trust me, this is a pretty amazing dish that is loved by many for years! It is an incredible pie that you should never miss!

Ingredients

Pie Crust:

1/3 c. melted butter

2 1/2 c. crumbled crackers, Ritz or saltine crackers

Pie Filling:

2 Eggs

2 1/2 c. thinly sliced Vidalia onions

2 tablespoons butter

3/4 c. milk

3/4 c. grated cheddar cheese

dash hot sauce

1/2 teaspoon dry parsley, optional

1/2 teaspoon salt

1/4 teaspoon black pepper

How to make Vidalia Onion Pie

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Into the crumbled crackers, mix the melted butter until it is completely absorbed. Into a 9-inch pie pan, evenly spread the wet crackers and press on the bottom and sides to create a pie shell.

Step 3: In a skillet, melt 2 tablespoons of butter over medium-low heat. Once the butter has melted, add the sliced onions to the skillet and saute for about 10 minutes until softened.

Step 4: In the meantime, combine the milk in a bowl along with eggs, salt, pepper, and hot sauce until well blended.

Step 5: On the cracker pie crust, evenly spread the tender onions. Over the onions, pour the egg mixture and top with the grated cheese and parsley.

Step 6: Place in the preheated oven and bake for about 40 minutes. Remove from the oven when done and allow the pie to cool for about 5 minutes.

Step 7: Slice the Vidalia Onion Pie and serve. Enjoy!
