My family’s favourite go-to soup for cold days and my number one choice – made with healthful potatoes, corn, green beans, celery, carrots, and onions in a seasoned chicken broth. This soup recipe is pretty versatile because you can add whatever veggies are available. Or even use leftover veggies! Make this on the stovetop in no time or the slow cooker or instant pot if desired.

Ingredients
1/4 c olive oil
1 yellow onion diced
2 stalks celery diced
2 cloves garlic minced
2 tsp kosher salt
1/2 tsp coarse ground black pepper
1 large potato peeled and diced
2 carrots sliced
1 c corn
1 c peas
1 c green beans chopped
2 vine tomatoes diced
4 c chicken broth
2 c V-8 juice
How to make Vegetable Soup
Step 1: Heat the olive oil in a large stockpot over medium heat.
Step 2: Once the oil is hot, saute the onions, celery, and garlic for approximately 4 to 5 minutes until translucent.
Step 3: Add in the remaining ingredients (salt, ground black pepper, diced potato, sliced carrots, corn, peas, chopped green beans, diced tomatoes, chicken broth, and V-8 juice).
Step 4: Bring the mixture to a boil.
Step 5: Then, decrease the heat and simmer for about 30 minutes.
