I am super obsessed with these mini roll-ups! These are also my kid’s favourite packed lunches. All the goodness in one cute vegetable cream cheese tortilla roll-ups. You can even serve these amazing roll-ups as an appetizer and expect everyone to love it.
The kids are back to school. I am going to be working at home for a few weeks. We all are excited to go back to normal. Since the pandemic started I never let my little ones go out. Afraid of what might happen. Now, that everything is already settling down, we are all excited for our life’s new chapter. I’ve been planning their weekly pack lunch/snack, and of course, these roll-ups will never be crossed out of the list. These confetti-coloured roll-ups are not only delicious but are also super easy and fun to make! I even served these roll-ups many times at parties and potlucks.

Ingredients
2 large burrito-sized flour tortillas
4 ounces cream cheese (softened)
1/3 cup mayo
1/2 tsp garlic powder
1/2 cup grated cheddar cheese
1/4 tsp dried dill
1/4 tsp salt
1/8 tsp black pepper
1 cup chopped veggies: broccoli, carrots, red bell pepper
2 tbsp chopped green onion
HOW TO MAKE VEGETABLE CREAM CHEESE TORTILLA ROLL-UPS
Step 1: Into small pieces, chop the vegetables, almost mincing them.
Step 2: Allow the cream cheese to soften at room temperature for a couple of minutes. Then, add this to a mixing bowl along with the garlic powder, mayonnaise, dill, salt, and pepper. Mix well until combined.
Step 3: Heat the tortillas in the microwave for approximately 20 seconds.
Step 4: Over each tortilla, spread the cream cheese mixture. Roll each tortilla and secure it with a toothpick.
Step 5: Keep the roll-ups in the freezer for at least 20 minutes, then evenly slice them into pieces before serving. Enjoy!
