I love this upside-down potato, onion. This is always a big hit whenever I serve this to my family and friends. We love to pair this up with meat. The name itself described this dish pretty well because before serving, you have to turn the potato onion upside down. If you have not tried this yet, you should very soon! This is perfect, and the crowd approved.
To make this upside-down potato, the onion you need only a few simple ingredients. For the cheese, you can use two cups of your preferred cheese. As for me, I used a combination of grated mozzarella, crumbled feta, and grated gruyere. Assemble and pop in the oven for a few minutes and voila! You have the best upside-down potato onion! It’s the perfect combo of onions and potatoes.

Ingredients
2 tbsp olive oil
2 1/2 tbsp butter
1 pound red potatoes, washed and very thinly sliced
12 sprigs thyme, strip the leaves from the stems (optional)
sea salt and cracked black pepper
1 large onion, sliced somewhat thickly (a tad more than 1/4” thick)
2 c. of Cheese (or use your favorite):
1 c. grated mozzarella
1/2 c. crumbled feta
1/2 c. grated gruyere
HOW TO MAKE UPSIDE-DOWN POTATO, ONION
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: In a 9-10-inch ovenproof frying pan (cast iron), melt the butter over medium heat. Once the butter has melted, add the thyme and onion to the pan and cook for about 5 minutes.
Step 3: In a bowl, place the potatoes, oil, cheeses, salt, and pepper. Toss to coat the potatoes.
Step 4: On top of the onion, place the potato mixture. Bake in the preheated oven for about 45 minutes or until golden brown and completely cooked.
Step 5: Remove from the oven when done and turn upside down. Serve and enjoy!
