Twice Baked Potato Casserole

Servings: 10 to 12

This baked potato casserole is my favourite holiday and potluck dish. It is packed with creamy potatoes, cheese, and crispy bacon. This casserole is a very comforting dish that you can easily make in a snap!

Ingredients

1 1/2 sticks salted butter 3/4 c., softened

1/2 lb bacon

1 c. sour cream

2 c. mild cheddar cheese shredded

1 c. milk I use 2%

8 medium russet potatoes

2 green onions sliced

2 tsp seasoned salt

1/2 tsp pepper

How to make Twice Baked Potato Casserole

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: In the meantime, let the butter, sour cream, and milk sit on the countertop.

Step 3: After cleaning and scrubbing the potatoes, poke a couple of holes in them using a fork. In foil, wrap each potato and place them on the centre rack in the oven. Bake the potatoes for about 45 minutes. When done, set the potatoes aside and adjust the oven temperature to 350 degrees F.

Step 4: In a large skillet, cook the bacon over low heat until crispy. Transfer the cooked bacon to a paper-towel-lined plate. Once cool enough to handle, chop the bacon into small pieces and set it aside.

Step 5: Now, remove the skins of the potatoes. In a large bowl, place the potatoes and mash them using a potato masher until creamy. Then, add the butter, sour cream, and milk. Mash and stir in half of the crumbled bacon.

Step 6: Into a greased 9 x 13-inch baking dish, spread the potato mixture and top with the shredded cheese and the rest of the bacon. Place in the oven and bake for about 25 minutes or until the casserole is hot and the cheese is bubbly.

Step 7: Take the casserole out of the oven when done and let it rest for about 5 minutes. Serve the casserole garnished with some green onions. Enjoy!
