4 tbsp butter, divided
8 oz. medium-size shell pasta
1 clove garlic, minced
3/4 c. frozen peas
1 rib celery, diced
1/4 c. onion, diced
1 14.5 oz. can low-sodium chicken broth (just under 2 c.), warmed
1 c. freshly grated Parmesan cheese, divided
1 c. milk, warmed
1/8 tsp dried dill weed
4 tbsp all-purpose flour
2 tbsp fresh parsley leaves, minced
2 tsp fresh lemon juice, more if desired
5 oz. canned albacore white tuna, packed in water, more if desired
1/4 tsp salt
1/4 tsp freshly ground black pepper
Topping:
1 tbsp butter, melted
1/2 c. Ritz crackers, crushed
How to make Tuna Noodle Casserole
Step 1: Following the package directions, cook the noodles until al dente.
Step 2: In a large skillet, melt 1 tbsp butter. Once the butter has melted, add the celery, onion, peas, and garlic to the skillet. Saute for a couple of minutes. When done, set the veggies aside.
Step 3: For the sauce, melt the rest of the butter into the same pan. Add the flour to the melted butter and stir for about 30 seconds. Gradually stir in the chicken broth and milk while stirring constantly until smooth. Then, bring the sauce to a low simmer. Make sure to stir the sauce often and cook for about 2 to 3 minutes until bubbly and thickened. Adjust the heat to low and add the salt, dill, lemon juice, parsley, and half cup Parmesan cheese. Adjust the seasoning according to taste.
Step 4: Take the pan off the heat and toss in the pasta, vegetables, and tuna. Into a 9 x 13-inch or similar baking dish, pour the mixture and sprinkle with the rest of the Parmesan cheese.
Step 5: Next, add the Ritz crackers and melted butter, then sprinkle this on top of the casserole. Place in the oven and bake for about 25 to 30 minutes at 350 degrees. Remove from the oven when done and serve the casserole with green salad, veggies, fresh fruit, or homemade rolls. Enjoy!
