1/2 small onion, finely chopped
1/4 c. chopped parsley and more for garnish
6 slices bacon
6 – 1/4 dill pickle (optional)
Salt and pepper to taste
1/3 c. flour
3 tablespoons butter
3 tablespoons low sodium soy sauce (not traditional but adds so much flavour)
1 tablespoon Worcestershire
8 mushrooms, sliced
GRAVY:
2 tablespoons flour
2 tablespoons Butter
HOW TO MAKE TRADITIONAL BEEF ROULADEN
Step 1: On a cutting board, lay 6 slices of meat. Brush with Dijon mustard and in the middle of the meat, place a bacon strip, then sprinkle over the onions. Parsley, and pickle if using. Season with salt and pepper. Roll the steak up and secure it with toothpicks. Do the same process with the rest of the steak.
Step 2: Coat the rolls in flour.
Step 3: Melt 3 tbsp butter in a large saute pan over medium-high heat. Fry the rolls until all sides are browned but not cooked through. If needed, cook the rolls in batches.
Step 4: When the rolls are done cooking, transfer them to a casserole dish and leave a bit of space in between each roll.
Step 5: Pour in water or beef broth into the frying pan and deglaze, scraping up the drippings. Pour this over the rolls along with low sodium soy sauce, Worcestershire, and extra water to make sure that the liquid is about halfway up the rolls. Add in the mushrooms, then season with salt and pepper.
Step 6: Place inside a preheated 325 degrees F oven and bake the rolls for about 1 1/2 to 2 hours.
Step 7: Before the baking time ends, whisk the cream and flour.
Step 8: Remove the dish from the oven, take the rouladen out of the casserole dish, and set it aside. In a saucepan, pour the gravy, add in the flour and butter mixture, simmer, and whisk until thickened. Adjust the seasoning according to taste. When done, pour the gravy over the rouladen and garnish with parsley.
Step 9: Serve and enjoy!
